Choose the right cooking surface

A flat top griddle gives you a smooth surface for breakfast foods, burgers, sandwiches, fried rice, quesadillas, and other items that need full contact with the plate. A charbroiler uses open grates to give food grill marks and flame-broiled flavor. A panini grill works best for pressed sandwiches, wraps, and small-batch grilling.

Match the size to your volume

Smaller countertop models work well for cafes, bars, concession stands, and kitchens with limited space. Wider 24", 36", 48", and 60" models give you more cooking zones and better output during rush periods. Leave room for ventilation, landing space, cleaning access, and safe clearance around the equipment.

Pick gas or electric

Gas griddles and charbroilers are a strong fit for high-volume cooking and fast recovery. Electric models are useful where gas lines are unavailable or where a smaller countertop unit makes more sense. Always confirm voltage, phase, plug type, gas type, BTU rating, and ventilation requirements before ordering.

Compare controls and plate thickness

Manual controls are simple and durable for general cooking. Thermostatic controls give you tighter temperature control, which helps with repeatable results. Thicker griddle plates hold heat better during heavy use, while thinner plates can heat faster for lighter-duty service.

Plan for cleaning

Look for removable grease trays, drip troughs, splash guards, stainless steel construction, and grates that are easy to lift and clean. Easier cleaning saves time at closing and helps keep the cooking line running safely.
